Avec un peu de cr\u00e9ativit\u00e9 et l&rsquo;aide des autorit\u00e9s municipales, les restaurants ont pu convertir des portions de parkings et de trottoirs en espaces de restauration, ce qui leur a permis d&rsquo;augmenter le nombre de places assises tout en respectant les r\u00e8gles de distanciation sociale. <\/p>\n\n<p>Certaines <a href=\"https:\/\/apgsolutions.com\/industry\/hospitality\/\">entreprises d&rsquo;h\u00f4tellerie<\/a> ont rapidement pivot\u00e9, en favorisant l&rsquo;achat de cartes-cadeaux et en encourageant les clients \u00e0 utiliser la commande en ligne pour des options de service \u00e0 domicile telles que GrubHub, DoorDash ou UberEats. L&rsquo;\u00e9volution des r\u00e9glementations \u00e9tatiques et locales a permis le ramassage \u00e0 domicile de la bi\u00e8re et du vin, ce qui a aid\u00e9 les restaurants locaux \u00e0 maintenir leurs ventes.   <\/p>\n\n<p>Malgr\u00e9 tous ces efforts, les restaurants &#8211; qu&rsquo;il s&rsquo;agisse de cha\u00eenes ou d&rsquo;\u00e9tablissements ind\u00e9pendants &#8211; ont \u00e9t\u00e9 durement touch\u00e9s par la pand\u00e9mie.<\/p>\n\n<div class=\"wp-block-spacer\" style=\"height: 20px;\" aria-hidden=\"true\"> <\/div>\n\n<h2 id=\"h-the-numbers-not-too-easy-to-digest\" class=\"wp-block-heading has-text-align-center\"><strong>Les chiffres &#8211; pas trop faciles \u00e0 dig\u00e9rer<\/strong><\/h2>\n\n<div class=\"wp-block-spacer\" style=\"height: 20px;\" aria-hidden=\"true\"> <\/div>\n\n<figure class=\"wp-block-image alignright size-large is-resized\"><\/figure>\n\n<p>Les propri\u00e9taires courageux et novateurs trouveront des moyens de rester en activit\u00e9, mais tous les restaurants ne survivront pas \u00e0 l&rsquo;impact \u00e9conomique du coronavirus. Les fermetures sont in\u00e9vitables et l&rsquo;IHL pr\u00e9voit que 64 % des 443 600 fermetures de magasins pr\u00e9vues pour 2020 concerneront le secteur de l&rsquo;h\u00f4tellerie et de la restauration, qui comprend les restaurants ind\u00e9pendants. <\/p>\n\n<p>Depuis le d\u00e9but de la pand\u00e9mie, IHL estime que les restaurants ont perdu 17 % de leur chiffre d&rsquo;affaires. D&rsquo;ici la fin de l&rsquo;ann\u00e9e, ils auront perdu 25 % de leur chiffre d&rsquo;affaires. Le secteur de la restauration semblait bien parti pour conna\u00eetre une bonne ann\u00e9e, avec des ventes en hausse de 9 % en f\u00e9vrier. Toutefois, les projections ont \u00e9t\u00e9 publi\u00e9es avant la r\u00e9surgence des cas de coronavirus dans d&rsquo;autres r\u00e9gions du pays, en particulier en Floride, au Texas et en Arizona.  <\/p>\n\n<p>Il reste \u00e0 d\u00e9terminer comment la r\u00e9surgence affectera les projections globales, mais l&rsquo;impact \u00e9conomique de la pand\u00e9mie a d\u00e9j\u00e0 \u00e9t\u00e9 fortement ressenti par les restaurants &#8211; et le secteur de l&rsquo;h\u00f4tellerie et de la restauration en g\u00e9n\u00e9ral. Les restaurants sont particuli\u00e8rement touch\u00e9s parce qu&rsquo;ils n&rsquo;ont pas pu accueillir de clients pendant la p\u00e9riode de fermeture des \u00e9tablissements et d&rsquo;interdiction de sortir. M\u00eame lorsqu&rsquo;ils rouvrent, ils doivent le faire \u00e0 capacit\u00e9 r\u00e9duite, g\u00e9n\u00e9ralement \u00e0 40 ou 50 %, ce qui rend difficile la r\u00e9alisation de b\u00e9n\u00e9fices.  <\/p>\n\n<p>Les restaurants sont confront\u00e9s \u00e0 un autre probl\u00e8me : Faire revenir les employ\u00e9s cl\u00e9s. Gr\u00e2ce aux allocations de ch\u00f4mage r\u00e9cemment adopt\u00e9es, certains travailleurs gagnent plus que lorsqu&rsquo;ils travaillent, ce qui les <a href=\"https:\/\/www.npr.org\/2020\/04\/29\/847701797\/as-governors-urge-businesses-to-reopen-workers-are-getting-pushed-off-unemployme\">dissuade de reprendre<\/a> un emploi mal r\u00e9mun\u00e9r\u00e9. Si la plupart des clients <a href=\"https:\/\/datassential.com\/wp-content\/uploads\/2020\/05\/Datassential-Coronavirus19-05-20-20.pdf\">font confiance au personnel du restaurant<\/a>, ils ne font pas confiance aux autres convives.   <\/p>\n\n<p>Selon un<a href=\"https:\/\/datassential.com\/wp-content\/uploads\/2020\/05\/Datassential-Coronavirus19-05-20-20.pdf\"> rapport de Datassential<\/a>, le COVID-19 a conduit \u00e0 l&rsquo;adoption de nouveaux comportements, 35 % des consommateurs d\u00e9clarant avoir une nouvelle passion pour la cuisine \u00e0 domicile et 51 % affirmant qu&rsquo;ils \u00e9viteraient encore d&rsquo;aller au restaurant. Pour certains, il s&rsquo;agira de mettre davantage l&rsquo;accent sur les commandes \u00e0 emporter et les commandes au bord du trottoir, ce qui n\u00e9cessitera la mise en \u0153uvre de nouveaux processus et de nouvelles technologies pour plus d&rsquo;efficacit\u00e9. <a href=\"https:\/\/hospitalitytech.com\/postcovidrestaurants\" rel=\"nofollow\">Selon Hospitality Technology ,<\/a> 18 % des consommateurs pr\u00e9f\u00e9reraient commander \u00e0 la table et 24 % des restaurants pr\u00e9voient d&rsquo;ajouter une technologie de commande vocale en 2020.  <\/p>\n\n<p>Les op\u00e9rateurs peuvent choisir d&rsquo;investir dans des tableaux de menus num\u00e9riques pour informer les clients \u00e0 distance que les commandes sont pr\u00eates, tandis que d&rsquo;autres envisagent d&rsquo;ajouter une autre connexion WAN pour augmenter la capacit\u00e9 num\u00e9rique et la r\u00e9silience. Certains restaurants ont commenc\u00e9 \u00e0 proposer un menu limit\u00e9, ce qui permet de r\u00e9duire les co\u00fbts d&rsquo;inventaire et le gaspillage potentiel de nourriture. Les logiciels de restauration utilis\u00e9s pour g\u00e9rer les demandes des restaurants \u00e0 service complet peuvent \u00e9galement \u00eatre utilis\u00e9s pour les restaurants \u00e0 service rapide et d\u00e9contract\u00e9. L&rsquo;investissement dans ces applications de gestion des listes d&rsquo;attente permet de suivre les informations relatives aux convives, ce qui peut s&rsquo;av\u00e9rer essentiel pour fournir des notifications en cas d&rsquo;exposition \u00e0 un virus.   <\/p>\n\n<p>La reprise peut \u00eatre lente &#8211; le DIH estime qu&rsquo;il faudra attendre 2023 pour retrouver les niveaux d&rsquo;avant la pand\u00e9mie &#8211; mais les entreprises qui investissent dans l&rsquo;innovation et la s\u00e9curit\u00e9 ont plus de chances de survivre jusqu&rsquo;\u00e0 ce qu&rsquo;une nouvelle \u00ab\u00a0normalit\u00e9\u00a0\u00bb soit \u00e9tablie. Le besoin de nourriture et ce que les gens choisissent de manger ne changeront pas, mais la fa\u00e7on dont ils l&rsquo;obtiennent changera probablement.
